Mediterranean Veggie Wraps

Use the hummus of your choice in this recipe, but we’ve included our tried-and-true Red Pepper Hummus here for your convenience.

This recipe is easy to customize. Determine the vegetable and cheese proportions based on how many wraps you are making, and substitute any Indianlife Large Wrap for the Tortilla Wraps.

Mediterranean Wrap from California Organics Restaurant

Ingredients

1/2 Cup Hummus (Your choice or try our Red Pepper Hummus recipe below)

Indianlife Tortilla Wraps

Lettuce or Assorted Salad Greens

Thin-sliced Fresh Cucumber

Grated Carrots

Sprouts (Any variety)

Sliced or diced red or yellow onion

Diced Fresh Tomato

Kalamata olives cut in half without pits

Low fat feta cheese or non-dairy cheese substitute

Instructions

Spread approximately 1/4 cup hummus over each wrap

Layer lettuce and the rest of ingredients over the hummus, spread olives and crumbled Feta cheese over all. Roll up and secure with wooden picks. Cut in half. Enjoy!

Red Pepper Hummus

Ingredients

  1. 1 cup boiled Chick Peas

  2. 3 cloves of Garlic

  3. 1 tablespoon Lime (juice)

  4. 1/2 teaspoon Indianlife Ground Cumin

  5. 2 tablespoons Olive Oil

  6. 1 teaspoon Salt

  7. 1 tablespoon Water

  8. 1/2 Red Bell Pepper

Instructions

Combine all ingredients in blender or food processor and blend till smooth consistency. Recommended: Blend together Olive Oil and Lime Juice first, then add the other ingredients, blend to smooth and add the water last. Use the water to help you reach the exact consistency you desire. Add a bit more if you need to, or you may choose to omit it.
