Quinoa Recipe


Quinoa Wraps

Ingredients

1 cup quinoa

4 sprigs of spring onions finely chopped

½ green pepper finely chopped

½ red pepper finely chopped

¼ zucchini finely chopped

2 cloves of garlic finely chopped

1 green chilli finely chopped(optional)

1 teaspoon finely chopped ginger

Indianlife wraps could use the spinach, sundried tomato or the masala wraps

Indian life cilantro chutney

Salt, pepper, oregano to taste

3 tablespoons olive oil


Boil the quinoa in 2 cups of water for 12-15 minutes on medium heat until the quinoa is cooked

Remove from heat and leave the quinoa covered for 10 minutes

In a separate pan sauté the spring onions, garlic, green chilli and ginger in olive oil for a few minutes

Then add green, red pepper and zucchini and sauté for 10 minutes

Add the quinoa, salt, pepper, oregano and mix well

On the wrapper spread a thin layer of cilantro chutney

Then spread a thin layer of quinoa mixture all around except for the edges of the wrapper

Then fold the wrap tightly to form a roll and cut in pieces

Bake in oven for 20 minutes at 350 degrees

Serve hot with Indianlife tamarind chutney or Indianlife mango chutney
