Sweet, Sensational Indian Carrot Pudding (Gajar Halwa)

Gujar Halwa or carrot pudding is as easy to love as it is to make! We prepare ours from organic carrots and Indianlife Non-GMO Ghee for a treat kids of all ages will love!


Sweet & spicy Indian Carrot Pudding (Gujar Halwa) is one of our favorites and we’re betting it will become one of yours too! Our recipe features finely grated organic carrots, simmered with milk (vegan or dairy) and Indianlife Non-GMO Homestyle Ghee, and seasoned with Indian spices. Gujar Halwa provides vitamin A, Vitamin K, dietary fiber and calcium. Indianlife Ghee also adds butyric acid, a short chain fatty acid that helps feed the beneficial probiotic bacteria in our digestive tract. Enjoy it warm, and the carrots and ghee will melt in your mouth!

Preparation/cooking time: 20 minutes

Makes 4 servings

Ingredients:

1/2 pound finely grated organic carrots

1 cup sugar

1 cup milk

1/2 cup Indianlife All Natural Homestyle Ghee

1 teaspoon (tsp) cardamom

2 tablespoons chopped cashews

2 tablespoons chopped almonds

2 tablespoons raisins

1/4 teaspoon saffron

 Instructions:

Heat 1/4 cup of Indianlife Ghee in a pan over medium low-medium heat, sauté carrots for 3 minutes or until they begin to cook.  Add the milk, and cook for 5 minutes.  When the carrots are soft, mix in the sugar, chopped almonds and cardamon. Cover and cook another 5 minutes or so, then turn off the heat.

In another small pan, heat the ghee and add the chopped cashews, stirring to roast them in the pan until they turn golden. Add raisins and roast for one minute, then add to the carrot pan along with the saffron. Mix well to combine ingredients and serve warm.
